I have a SIG 1911 XO. Very accurate and reliable. 2000 rounds through it without a jam. 1700 of those rounds were my handloads with lead semi wadcutters. The SIG offer alot for the money. I paid around 800 for mine. Its stainless with a black Nitrex coating. Alot of people didnt like the looks of the squared slide on them. So SIG came out with a new 1911 called the Traditional. Others to look at in that price range and very good pistols also are the Smith and Wesson and the Spingfield.
The higher end guns are great and like another poster mentioned Fusion Firearms. Very very nice guns. And less money than most of the other high end guns.

My Kimber stainless target model is very accurate and has functioned with everything I've put in it.It came with adj. sights and fit and finish is very nice. If I had to do it over again would I purchase that same pistol? in a heartbeat!!!

I think it would be pretty cool to get a 1911 longslide in 10mm for hunting purposes!

Buffalo Bore has a 255 hard cast for the 1911. I am thinking I am going to get the Lee 255 RF mold when I order there 200 RF... I would like to see what they would do in my H&K USP Tactical 45.

I think Fusion Firearms has a longslide model in 10mmjust for that purpose.

I believe there are a couple companies building the 1911 in 10mm but it depends on if the gun is a self defense or hunting gun. Self defense and close up hunting the 45ACP is hard to beat but if I was going primarily hunting I'd go with the 460 Rowland over the 10MM since that is giving you 44 Mag power in a standard 1911 platform.

springfield. not that big of a 1911 fan. I had the mil spec, and was vary impressed. I dont recall uncle sams 1911s shooting so well. Shot some kimbers and not all that great for the $ imo. Did like the gold cup, still id take the mil spec s.a. of course i see a 1911 for what it is, something to stop 2 legged varmints.

If you want a 10 and don't mind the hi-cap feature, check out the STI "Perfect 10", it's a wide body 10mm made in Texas. Yeah!
I've been shooting STI's for a while and the guns are outstanding! They offer 2011's as well as 1911's. In single stacks, their "Trojan" is pretty popular but I've heard good things about the entry-model "Spartan" as well. Don't worry about tight 1911's, if you break them in properly and run them wet (I like Castrol ATF), they'll be perfect within a few hundred rounds.

BTW, not bad mouthing here, just sharing an experience. I've personally seen a Taurus 1911 completely lock up in a match because the "innards" were worn out after 1000 rounds or so.
