Glad to here you are not overworking a perfectly good horse ;^) The only thing I know about horses is that the saddlehorn is not a handle, but I tend to use it as one. So that will give you a clue to my skill level. Oh, I also know the level of commitment and lifestyle adjustments it takes to have them. A LOT!!!
But I do know about help skinning. For me on the ranch that I hunt a lot anymore, I can drive my Jeep anywhere, and cut anything in the way. So my 20 year old "steed" is equiped and I use it like your horse. Dragging, hauling, positioning, lifting, you name it. Not sure if a lot of folks can appreciate what an elk hoof to the side of the head can do to your skinning/gutting plans, but it kinda sucks. And hurts...
